We decaffeinate our instant coffee using the Mountain Water Process, a solvent-free method that removes caffeine while protecting flavor and aroma. Green coffee beans are soaked in purified mountain water; caffeine is then removed using activated carbon filters while flavor compounds stay in balance. The beans are dried, roasted, brewed, and made into instant.

No methylene chloride or ethyl acetate is used. Our process is similar in spirit to Swiss Water® — both are water-based, chemistry-smart processes designed to preserve flavor without added chemical solvents.

Our decaffeinated coffee is approximately ~99.7%+ caffeine-free.

We realize this useful piece of information should be included on that packaging and are working to include it on our labels, for added reaffirmation. Rest assured, our instant decaf coffee is decaffeinated using the Mountain Water Process.

Yes! If you want a certain coffee roasted in a different profile, please email us. Please note there is a minimum order of 10LBS required for custom roasts.

Yes! You can find us at Baesler’s market grocery store located off Poplar St.  You can also order from our website and get free shipping by meeting or order minimum. Any coffees that are not available at Baesler’s, you can request directly with the store manager.

All of our instant coffee is USDA Organic Certified. Some of our roasted coffees are as well, but please inquire with us if you have a question as to a specific coffee.

We recommend whole bean, if possible. If you require the coffee ground, a general rule is Coarse for coffee press style brewers, Drip for auto-drip or slower pour over brewers like Chemex, and Fine for faster brewers like the Hario V60. When in doubt, contact us and we will be happy to help.

Rex Coffees are shipped in sealed bags with a one-way degassing valve. Keep the bag sealed until ready to use, then reseal with the tie provided. Store the bag in an airtight container in a neutral area out of the light and away from humidity and temperature fluctuations. We do not recommend storing coffee in the fridge or freezer.

All Rex Coffees (except for instant coffee) are roasted on a Probat L-12.

The right coffee is the one you like. Start with something similar in roast level to a coffee you’ve had in the past. If you do not know, start with a medium roast coffee like Brazil. Perhaps you prefer an Organic or Fair Trade coffee? Or something unique. If in doubt, we will be happy to answer any questions.

A single origin is a coffee from a single place, for example Brazil. Some single origin coffees are additionally from smaller regions, like Colombia ‘Tolima’, or from a single cooperative or farm. Blends are a combination of a few coffees, usually from different countries, regions or farms.

Rex Coffee is roasted to order each day. This is a more time consuming process; however, we believe that it pays off in the cup.
